It's a net of connective tissue (~20kg!) and has a critical role in our well-being.

I never thought of myself as a bread-lover, but I noticed that the only food I miss when abroad is rye bread (Schwarzbrot) from Austria. ๐
I remember I used to bring a loaf to uni when I was living in Scotland. ๐
I finally decided to try and make it myself. ๐ฅณ
After some trail and error I think I have a successful method and it tastes just like home.
Now I bake it every week.

I followed this recipe and used an air frier to bake it - hence the small buns.
If you're into baking or German sourdough rye bread, feel free to give it a try!
It's yummy and healthy. ๐
