I've been MIA since last Thursday (caught gastro) 😭, so been out of the kitchen for days.

Today's been the first day that I've started to feel almost well.again.

Thankfully I had some #frozen #mexicanbeef in our freezer, so I just defrosted it in the #crockpot ; #baked some #potatochips and have thrown together what I call a #mexican #potato #lasagne for dinner tonight. #bachamelsauce

Just need to make up the salad now!

Made #mexicanbeef for #dinner last night. And there is nothing better than a #mexican #pokebowl for #lunch the next day.
