Does your phone support eSIM?
Look for an EID, the number of the built-in eSIM:
• iPhone: Settings → General → About;
• Android: Settings → About phone.
On many phones, dialling *#06# shows it too.
An EID means your phone supports eSIM. No EID means no eSIM. The phone also needs to be carrier-unlocked.
On Android, it even depends on where the phone was sold: the same model can have eSIM in Europe and none in India or mainland China.
