1. Catalytic hydrogenation: This is the process of producing solid or hardened fat or margarine from liquid fat or oil(both liquids). This process converts the double bonds of unsaturated fatty acids to saturated fatty acids. This is done to prevent rancidity which may be caused by auto-oxidation of the food using double bonds as sites of reaction. To do this, hydrogen is added to the fat & oil (triglyceride) in the presence of nickel catalyst over a temperature of about 200Β°C.
Hardened oil or solid fat is gotten as the end product. This product is then treated with vitamins, salts, milks and flavourants to give margarine.β
πΉ Catalytic hydrogenation is done to make natural fats and oils edible.
2. Saponification: This is the alkaline Hydrolysis of fats and oils using NaOH or KOH to yield propane-1,2,3-triol(glycerol) and soap. The glycerol formed of a trihydric alkanol with 3 -OH groups. "Glycerol formed is used in making paintsβ β "
πΉHard soaps are produced if NaOH(caustic soda) is used. Hard soaps are used for laundry
πΉSoft soaps are produced if KOH(caustic potash) is used. Soft soaps are used for toilet soap and laundry.
