Once launched at DappBuilder.net they will all be added to users token tools. No any redeployment will be required - a token tool main contract is able to process any contracts added to DappBuilder. So you will not have to redeploy any previously created token tool contracts.

Only downloadable UI will require updates (we are working on auto-updating UI also).

The reason behind the poll is that using a native currency is always easier as it lets implement simple send-to-bet functionality etc though any stablecoins require approve-then-bet flow.

It is very simple, limited, not many chains, very old wallet connection - but still used.

Btw all of your tokens created via the legacy version are visible in the actual version when you chose a token for any contract.
