Chicken fillet – 1 kg.
Rice flour – 2 tablespoons.
Medium carrot – 1 piece.
Medium zucchini – 1 piece.
Parsley – to taste.
Onion – 1 piece.
Eggs – 3 pieces.
Salt – 2 teaspoons.
Pepper – 1 teaspoon.

⏳Preparation:
1. Chop the chicken fillet in a blender or pass it through a meat grinder. Finely chop the onion and fry it in vegetable oil.
2. Grate the carrot on a grater and also fry it in vegetable oil. Grate the zucchini on a grater and squeeze out the excess liquid. Finely chop the parsley.
3. Mix the minced chicken with all the ingredients to form a homogeneous mass.
4. Shape the cutlets with wet hands and fry them in vegetable oil until they have a light golden brown crust and are half-cooked.
5. Place the cutlets in a baking dish and cook them in the oven at 180 Β°C for 20–25 minutes.

Ingredients:

4 green onions, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
170 gr fresh spinach
ΒΌ cup snipped fresh basil

400 gr package pizza dough
30 gr crumbled feta cheese
2 tablespoons toasted pine nuts
1 tablespoon butter, melted
ΒΌ cup finely shredded Parmesan cheese

Directions:

Preheat oven to 190 degree C. Grease twelve muffin cups. Cook green onions and garlic in 1 tablespoon of the oil until tender. Add spinach and basil; cook and stir over medium heat just until wilted. Drain off excess liquid. Stir in salt and pepper. Set aside to cool.

Unroll pizza dough and shape into a 20Ρ…30 sm rectangle. Brush with 1 tablespoon oil. Spread spinach mixture and sprinkle with feta cheese and pine nuts. Roll dough into a spiral

Slice roll into 12 pieces and place in muffin cups. Brush with butter and sprinkle with Parmesan. Bake 18-20 minutes, until golden brown

Greek Lemon Rice Recipe

Ingredients:

2 cups long grain rice (uncooked)
olive oil
1 medium yellow onion, chopped
1 garlic clove, minced
Β½ cup orzo pasta
2 lemons, juice of (PLUS zest of 1 lemon)
2 cups chicken or vegetable broth
salt
handful chopped fresh parsley
1 tsp dill (dry dill)

Instructions:

Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water. Drain well.

Heat about 3 tablespoon olive oil in a large sauce pan with a lid. Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.

Now add lemon juice and broth. Bring liquid to a rolling boil, then turn heat to low. Cover and let cook for about 20 minutes or until rice is done and liquid is absorbed.

Remove rice from heat. Leave it covered and do not disturb rice for about 10 minutes or so.

Uncover and stir in parsley, dill and lemon zest.

Oven Baked Chicken Cutlets

Ingredients:
3 boneless skinless chicken breasts
1 cup flour
2 large eggs
1 cup breadcrumbs
Β½ cup Parmesan cheese grated
1 tablespoon lemon zest
Salt, pepper to taste

Instructions:

Preheat the oven to 200Β°C. Place a wire rack on a baking sheet and brush or spray it with cooking oil, then set aside.

Prepare 3 separate dished:
1 - with 1 cup flour
2 - with 2 whisked eggs
3 - mix 1 cup breadcrumbs, Β½ cup grated Parmesan cheese, and 1 tbsp lemon zest.

Cut the chicken breasts in halves lengthwise. Cover them with plastic wrap and pound with a meat tenderizer until they are even thickness and about 1/2 sm thick. Season them with salt and pepper from both sides.

Dredge each cutlet in flour, then beaten eggs, and then breadcrumb mixture. Place on a pre-greased wire rack. Spray the tops of the cutlets with some cooking spray, that will help to keep the tops crispy and get golden in color.

Bake at 200Β°C for about 15-20 minutes.

Instructions:

Toss the cucumber with 1 tsp. salt. Let the cucumber drain for 15-20 minutes to remove excess water.

Meanwhile, in a small bowl, whisk together the vinegar, lime juice, honey, sesame oil, red pepper flakes, and sesame seeds.

Once the cucumber has drained for a bit, spread it onto a layer of paper towels, and gently pat out as much moisture as you can. Place the "noodles" into a large bowl, and add 2-3 Tbsp dressing, to coat. Toss to combine, then garnish with additional sesame seeds, sliced scallions, and fresh cilantro. Serve immediately.

Directions:

Mix the chicken into the egg until fully coated before mixing in the corn starch until just evenly coated.

Meanwhile, mix the honey, garlic, broth, vinegar, soy sauce, red pepper flakes, and cornstarch.
Add the sauce mixture to the pan, bring it to a boil and simmer until it thickens a bit, about a minute.

Optional: Add 1 tablespoon toasted sesame seeds.

Garlic Steak and Potato Foil Packs

Ingredients:
1 kg steak - trimmed of fat and cut into 5 sm pieces
500 gr baby yellow potatoes - quartered
3 tablespoons olive oil
salt and pepper to taste
1 tablespoon minced garlic
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried parsley
1 teaspoon dried thyme
fresh thyme or parsley for topping

Instructions:

In a large bowl combine steak, potatoes, olive oil, salt and pepper, garlic and seasonings and toss to combine.

Divide steak and potatoes between four 30x30 sm sheets of foil, then wrap the foil tightly around the contents to form your foil packs. Grill over high heat for about 10 minutes on each side or until steak and potatoes are cooked through OR bake at 220 degrees for about 20-25 minutes until cooked through to desired doneness.

Garnish with fresh thyme or parsley and serve immediately.
