This is one of those give it a go.. and canβt believe how amazing it turned out moments!
I used the bread recipe I have posted about before.
This is a no kneed bread, just mix it in a bowl and leave for 2 hours.
Here it is:
https://m.youtube.com/watch?v=5IUNIOYSX1w
Put the bread on the tray well floured. Put finger wells all over it. Drizzle olive oil all over it. Then add rosemary, garlic and rock or flakey sea salt and bake for 15-20 mins until golden brown. It is now a focaccia style bread.
Simple simple simple.
Will be nice on a platter, by itself. As a lunch with salad etc, or dipped in a stew or casserole...
It is heavenly βοΈ βοΈ

People asked if I can do a dehydrated meal, after my post about trying a bought one. Yesterday I gave that a go and this is the results.
It is pretty good for a first try and super easy. I quite like it!
Here is the recipe I made up for this process:
1 x onion chopped
3 x cavanero kale leaves
1 stalk celery
Very finely sliced pumpkin
Handful chopped chives
Dry them all well. They dry at different rates so take out the ones that dry first and place aside.
Cook 3 cups brown rice in the rice cooker.
In the rice cooker put:
Cut up lemon plus lemon juice
Herbs plus a little chilli
Get as much flavour in the rice as possible when u are cooking it.
Dry rice in dehydrator.
When everything is dried place in the container for storage and add:
8-10 Tbs coconut milk powder
1/10 curry powder or other dried spice you like
Red pepper mix (in photo)
Salt and pepper
Shake through throughly.
When rehydrating, add water in the cup till 1cm over the dried contents.
Serves 4.
Let me know your thoughts!

Changes I would possibly make to the recipe above:
Less onion, more chives.
Add curry powder to rice when cooking and slightly more of it.
Other than those small changes it is pretty good for a fully dehydrated meal!
If you are worried about long term storage, you could possibly keep the coconut powder seperate until you are ready to use it. Just store the rice and veges in one container and your powdered mix in another.
The other alternative is to not flavour the veges or rice at all and take a small jar of Thai curry mix with you when you are hiking to add when you rehydrate the meal. The reason you wouldnβt add upfront is it is oily.
Do not add any curry mixes with oils in it as this causes issues with drying process.
Happy experimenting!
I was pretty pleased with it!

Dairy free options..
Sometimes it is hard to find dairy free options..
Here is a new one I tried today.
Oat sweetened condensed milk. I used it in the place of normal condensed milk at it was the perfect replacement.
It is so yummy, like standard condensed milk you can eat it off the spoon!
Highly recommended for those who want a sweet DF option for making lolly cake.

Did you know you can make your own vanilla essence?
Good quality extract is super expensive.
Here is a link to a site that describes how to make it.
I am going to start my brew next week!
