Supplies needed for wine/vinegar
At least 2 glass carboys of your desired size (or food grade containers that fit at least a gallon of volume)
Suitable plug and airlock for the system and lids for the containers
RedStar champagne yeast (this is what I personally use)
Food grade tubing to siphon with (or an actual racking siphon lol)
Your desired fruit for a mash (or just use 100% fruit juice)
Step 1:
Make your mash. There are lots of videos on how to do this online and a variety of ways to spice it for your particular liking. Or as mentioned you can use 100% fruit juice of your liking (I like welches white grape for this) and add 1/4 - 1 cup of sugar per gallon for a higher ABV and sweeter taste. NOTE: make sure you mix the sugar into solution rather than letting it settle at the bottom.
Step 2:
Add mash and water/juice and sugar slurry to your carboy along with 1/2tsp of the yeast per gallon of total volume and store in a climate controlled dark area for 6-8 days. Make sure you leave enough room for the foam so as not to over flow during fermentation. (You can also do this in food grade buckets rather than the glass carboys.)
Step 3:
After 6-8 days of fermentation, be sure to check on it frequently to ensure it does not stall or overflow, you will take your chosen container and place it in a refrigerated area. This will stop fermentation and allow the yeast to settle at the bottom of the vessel. You will leave this in refrigeration over night.
Step 4:
After the yeast has settled you should see a mostly clear product. You will need to siphon this to another container and leave the settled yeast at the bottom of the fermentation vessel. Place the new bottle in the fridge again and repeat a second time after another day.
Step 5:
After your second racking you should see a completely clear product as you would in a commercial bottle, if not you can re rack it a third or fourth time to clear out remaining sediment, AKA repeat step 4. You can then bottle in your growler of choice and enjoy your wine.
Step 6 (if you want vinegar):
Let step 3 go for 2-4 weeks rather than 6-8 days (you'll be able to taste when its ready). NOTE: you should use only the fruit juice for this method and no extra sugar as you will achieve the needed acidity for pickling without the extra cost of the sugar. Then rack until clear and store/use as your normal vinegar.
NOTE: This will make a VERY carbonated drink when done properly. This can make siphoning and opening the finished product a bit fizzy.
