β’ Tear off a big leaf & take out core.
β’ Slice medium cabbage very thinly in big bowl.
β’ Sprinkle with 1.5 T sea salt. Do not use table salt or any iodized salt.
β’ Massage or pound with wooden mallet about 10 minutes to get juices flowing.
β’ Mix in 1 T Kimmel ( caraway seeds) and 1-2 T fresh ( or frozen cranberries) (optional)
β’ Mix well, pack down tight into in 2 qt Mason jar.
β’ Everything should be covered in juice.
β’ Do not use any tap water!
β’ Put whole cabbage leaf over all & tuck it in so NO cabbage is out of the brine.
β’ If you need more juice, mix up 1 qt filtered water with 1T sea salt & add to cover whole cabbage leaf so nothing is sticking out of the brine.
β’ You can weigh it all down with a smaller jar filled with water.
β’ Put jar in a bowl to catch any overflow as it ferments, cover with dish towel or something and leave out on kitchen counter out of direct sun light 5-7 days.
β’ Ideal temp around 72F. If colder, takes longer, if hotter, will go faster.
β’ You can taste it and see if you like it, accordingly. Then you can remove whole cabbage leaf, put a lid on it, and store in fridge for a week before eating to improve flavor.
β’ Keep refrigerated indefinitely.
