🌟Lions Mane Mushroom Satay Stick

Lion’s mane mushrooms (Hericium erinaceus). Benefits: help reduce inflammation, brain and heart health, prevents dementia, relieve symptoms of depression and anxiety plus many more.


Ingredients:
Lion mane mushroom
Curry leaves
Fresh cucumbers
Sesame oil
Coconut oil
black glutinous rice wine
Monk fruit sugar
Tamari sauce/ soy sauce

Quantity is really up to you. Go with intuition.

Instructions;
1. Wash the mushrooms well. Watch https://youtu.be/7T5YsVgXrbI on how to clean and prepare mushrooms.
2. Squeeze mushroom dry and prepare for marination.
3. Add in pure sesame oil, tamari sauce, homemade shimichi powder, monk fruit sugar, shao xin wine (optional).
4. Mix well and leave to absorb for 30mins.
5. Spread coconut oil generously on mushrooms and lay on baking tray.
6. Grill in oven for 7mins.
7. Prepare fresh raw cucumbers
8. Assemble mushrooms n cucumber on sticks.
