The simple answer: Because terrorists turn them into combat zones.
To put evidence to that assertion, the Israel Defense Forces marked International Day to Protect Education from Attack by publishing photos from four schools in southern Lebanon where Hezbollah weapons were found. Some of the schools had hundreds of weapons in them.
Under the Geneva Conventions, once a protected place like a hospital or school is used for military purposes, it is no longer protected.

Security forces sealed a tunnel dug near the Palestinian village of al-Jib, north of Jerusalem, the Israel Police said on Thursday.
Authorities discovered the tunnel in August and later arrested a suspect carrying digging tools. An archaeological examination found that the tunnel entrance had been concealed inside an ancient cistern. Police said the tunnel was in an advanced stage of excavation when discovered.

Israelโs Central Bureau of Statistics reported that the countryโs population stood at approximately 10.305 million as of Rosh Hashanah eve, with Jewish and other residents making up 78.3% and Arab residents 21.7%, alongside roughly 304,000 foreign residents.
The population grew by about 124,000 people over the past year, a growth rate of 1.2%, driven by roughly 182,000 births and 50,000 deaths.
Net migration was negative, with the population declining by about 8,000 due to migration. While around 24,000 new immigrants arrived along with 4,000 through family reunification, roughly 57,000 Israelis emigrated, only partially offset by about 21,000 returning citizens.
