Yes, I always used dashes, that's not "AI thing", I used to use lists to compare items and improve the context for the readers.
Then AI stole it from me. I was literally banned from using any of that in work emails last year "otherwise it will be considered AI". So I've had to write wrong to "look like a genuine person".

I have the funniest story to tell: Sony argues βreasonable consumers would not be misledβ into believing they own digital games.
Several folks from The US started a legal action against them. PlayStation insisted that: a reasonable person would never think that BUY, Purchase, and other buttons mean owning a game.
Yes, they said that in court (to be precise, I slightly shortened their speech).
