Happy Winter Solstice! ☀️Cranberry, Ginger & Orange Sun Cake

Cranberries, Ginger, Citrus & Rose Hips make this a taste of the sun in the depths of winter.

It’s a lightly sweet and slightly tart delicious, easy cakes that I make at least once a week throughout cranberry season.

Gluten and dairy-free, lightly sweetened with maple or coconut sugar, this cake is perfect for Solstice and winter Celebrations.

Rose hips, orange and cranberry give this cake a good dose of vitamin C and immune-boosting support along with citrus brightness.

Ingredients:

9-9.5 inch Tart Pan or Pie Pan

12 Oz./1 Bag of fresh cranberries or frozen & thawed
1 cup all-purpose gluten-free flour (a 1:1 blend is great-Bob’s Red Mill, King Arthur, or use regular AP white flour)
1 cup cane sugar, coconut sugar or granulated maple sugar
1/2 cup slivered almonds or pecan pieces
2 eggs
3/4 cup (12 Tbsps/1.5 sticks) melted butter of your choice (plant-based or dairy)
2 teaspoons seeded rose hip powder
1 1/2 teaspoons shredded fresh ginger or 1/2 teaspoon ginger powder
Zest of one medium orange
1 teaspoon vanilla extract
1/2 teaspoon sea salt

Optional: A sprinkling of powdered sugar or 2 Tbsps gently reduced maple syrup with a pinch of salt. Edible flowers to top it off.

Directions:

1. Preheat the oven 325F and line and grease a 10-inch pie pan.
2. Whip the eggs and sugar until opaque and the sugar mostly dissolves.
3. Add in the melted butter, whisking constantly.
4. Now add the zest, ginger and rose hip powder, vanilla, salt, and stirring in the flour last.
5. Fold in the cranberries and 1/2 the almonds.
6. Scoop the mixture into the pie or tart pan.
7. Sprinkle the remaining almonds across tre top and bake for 60 minutes, checking for doneness.
8. Serve with whipped cream for a dessert or as a breakfast treat with a spiced, warm drink on the side🌞

❄️Cranberries are on sale this time of year so I buy them and freeze them to use in drinks and recipes through the winter. This recipe can be made with fresh or frozen berries!
