Ripe tomato salad 🥗

🍅Ingredients:

🔹Tomatoes - 2-3 pcs.
🔹Onion - 1 pc
🔹Garlic - 2 cloves
🔹Greens - 30-50 gr
🔹Olive oil - 2-3 tbsp
🔹Balsamic vinegar - 1 tbsp
🔹Salt / spices (to taste)

👩‍🍳Preparation:

🔪Cut ripe tomatoes into large slices. Onion thin rings or half rings. If desired, add a couple of cloves of garlic, put in a bowl and add chopped herbs. Season with olive oil, soy sauce and balsamic cream sauce. Gently mix.

Tomato, mozzarella and basil salad with mustard dressing 🥗

🍅Ingredients:

- tomatoes - 3-4 pcs.
- cherry tomatoes - 5-6 pcs.
- mozzarella cheese - 70 gr.
- basil leaves - 1 tbsp.
- a pair of olives
For the dressing:
- red wine vinegar - 1,5 tsp.
- dijon mustard - to taste
- salt - to taste
- ground black pepper - to taste
- olive oil - 1 tbsp.

👩‍🍳Preparation:

✔️Mix vinegar, mustard, salt and pepper in a large bowl and, whisking, introduce oil gradually. Add chopped tomatoes, mozzarella and basil and mix well. Season with salt and pepper. Garnish with olives/olives.

Zucchini drumsticks 🥞

🍆Ingredients:

✔️1 zucchini
✔️2 eggs
✔️2 tablespoons sour cream
✔️3-4 tbsp flour
✔️hard cheese (don't add)
✔️garlic
✔️greens (parsley, dill)
✔️salt, pepper

👩‍🍳Preparation:

🩸Grate zucchini (squeeze it necessarily) in a large bowl mix gradually all the ingredients, at the end add flour, Heat a frying pan and lay out our pancakes. Cook under a lid for 3-4 minutes on medium heat on both sides.
Perfect sauce for the doughnuts: sour cream + garlic + salt + cilantro.

Glazed cheesecakes with coconut 🧆

🥥Ingredients:

🩸Cottage cheese - 400 gr.
🩸Coconut shavings - 50 gr
🩸Powdered sugar - 40 gr
🩸Sugar and natural vanilla - 1 tsp.
For the frosting:
🩸Milk chocolate - 200 gr
🩸Walnuts - 50 gr

👩‍🍳Preparation:

✔️Combine the cottage cheese with coconut shavings, soft butter, powdered sugar, vanilla and everything is combined into a homogeneous mass.Then we make the cheesecakes and place them in the freezer for 30 minutes. Melt the milk chocolate in a water bath and mix well with vegetable oil. If desired, we can add chopped nuts. Pour the chocolate into a narrow glass and glaze the cheesecakes (put the cheesecake on a small knife), the glaze hardens very quickly (about a minute).

Chocolate cottage cheese cake 🥮

🍫Ingredients

✔️200 grams of flour (rice/wholemeal)
✔️50g butter (coconut/cream)
✔️3 tsp. cocoa
✔️2 eggs
✔️Sweetener (sugar)
✔️0,5 tsp. baking powder
✔️600gm 5% cottage cheese
✔️20g corn starch

👩‍🍳Preparation:

🔪The butter melt, mix with flour, yolks, cocoa and baking powder and sweetener.The dough should be loose, like crumbs.Whip the cottage cheese with a blender / fork until smooth, add the whites and sweetener! Put 1/3 of the chocolate chips in the mould and press down, put 1/2 of the curd mixture on top, then 1/3 again 1/3 of the chips and the rest of the filling and the last layer of chocolate.Cook at 180g. - 45 minutes! Let the cake cool.

🔹Eggplant - 2 pcs.
🔹Tomato - 3 pcs.
Dressing:
🔹Cucumber - 1 not large

Oatmeal with almond milk and caramelized bananas 🫕

🍌Ingredients:

🥄Oatmeal - 1 cup
🥄Almond milk - 2 cups
🥄Water - 2 c
🥄Banana - 1 pc
🥄Coconut oil - 2-3 t
🥄Salt - pinch
🥄Sugar - 1 t
🥄Nuts to serve: pecan, walnut

👩‍🍳Preparation:

🔪Fill the oatmeal with 2c of water and put it over medium heat so that the flakes open.When half of the water is boiled, add the almond milk.Add a pinch of salt and 1 tablespoon of sugar, cook the porridge over medium heat for another 10-15 minutes.Remove the porridge from the heat when the consistency is more liquid than necessary. Cover with a lid and leave it, after 5 minutes the porridge will be the right consistency and stay as long as necessary.Make the filling cut the banana into circles - crush the nuts in a mortar or just chop them.Caramelize the bananas heat the coconut oil with the cane sugar and add the bananas. Stir well so they caramelize completely.Serve the porridge: place in your favorite deep bowl, top with bananas and nuts. If desired, you can sprinkle with honey.

Mackerel baked with rice 🐠

🍚Ingredients:

🔹Mackerel - 2 carcasses
🔹Garlic - 2 cloves
🔹Paprika - 2 tsp.
🔹Rice - 1 cup
🔹Olives - 3 tbsp.

👩‍🍳Preparation:

♦️Thaw frozen mackerel in the fridge. Cut off the head, gills, gut. Boil rice until tender in salted water.Mix paprika, minced garlic, add 1-2 tablespoons of olive oil and stir together.Salt and pepper the fish, coat the inside and outside with this mixture.Pour about 1 tablespoon of olive oil into a parchment-lined dish, pour the rice, olives, sun-dried tomatoes cut in half and finely chopped parsley; mix together.Place the mackerel on top and bake in a preheated 180 degrees oven for 30 minutes.

Pasta with burrata 🍝

🧀Ingredients:

🔹Burrata cheese
🔹Pasta - 250g
🔹Tomatoes from a can (grated or sliced) - 400g
🔹Basil - a few leaves
🔹Olive oil - 2 tablespoons
🔹Cherry tomatoes (optional)
🔹Sugar - a pinch
🔹Salt/ground pepper

👩‍🍳Preparation:

♦️Press garlic, fry it for 3-5 minutes in good olive oil over medium heat. Pour in the tomatoes, add the basil, sugar and salt (about 1/2 teaspoon each), and a little freshly ground pepper.Braise the sauce for 5-10 minutes - the pasta will be cooked during this time. Cook it for 1-2 minutes less than it is written on the package.
