Pumpkin cookies 🫓

🍑Ingredients:

🔹Oat flakes or oat flour - 100-130 gr
🔹Chicken egg - 1 egg
🔹Pumpkin - 150-170 gr
🔹Onion - 1 pc.
🔹Salt - a couple of pinches
🔹Nutmeg - a pinch

👩‍🍳Preparation:

🔪In a bowl break a washed chicken egg.We take a piece of pumpkin, about 150-170 grams. Grate the pumpkin on a coarse grater.Then we add pumpkin and egg. Add oatmeal flour and mix together. Add onion.Grate onion or cut them into very small cubes.Add onion to the doughStir well. Let the dough stand for a while. During this time the onion and pumpkin will release juice, and the dough will become a little greasier. Cover a baking tray with parchment. Spread the dough on parchment.Sprinkle each galette with oat flakes, this will decorate them a bit. Bake for 15 minutes at 180-200 °C.

👩‍🍳Preparation:

🍆Ingredients:

🥄Chicken liver - 250 gr
🥄Champignons - 100 g
🥄Cherry tomatoes - 1 sprig
🥄Lettuce - bunch
🥄Onion - 1 / 2 pcs.
🥄Pepper, salt, sugar
Dressing: soy sauce - 2 tablespoons, olive oil - 6 tablespoons, mustard - 1 tablespoon, balsamic cream or vinegar - 2 tablespoons, honey - 2 tablespoons.
Optional: sesame or pine nuts

👩‍🍳Preparation:

🔪Coarsely chop the mushrooms, cherry tomatoes, lettuce and onion. Roast first the onion with a pinch of sugar, remove from the heat, then mushrooms with a pinch of salt, remove and liver until tender, salt and pepper.For the dressing, mix soy, oil, mustard, balsamic and honey.

🍅Ingredients:

- tomatoes - 3-4 pcs.
- cherry tomatoes - 5-6 pcs.
- mozzarella cheese - 70 gr.
- basil leaves - 1 tbsp.
- a pair of olives
For the dressing:
- red wine vinegar - 1,5 tsp.
- dijon mustard - to taste
- salt - to taste
- ground black pepper - to taste
- olive oil - 1 tbsp.

Zucchini drumsticks 🥞

✔️1 zucchini
✔️2 eggs
✔️2 tablespoons sour cream
✔️3-4 tbsp flour
✔️hard cheese (don't add)
✔️garlic
✔️greens (parsley, dill)

🥥Ingredients:

🩸Cottage cheese - 400 gr.
🩸Coconut shavings - 50 gr
🩸Powdered sugar - 40 gr
🩸Sugar and natural vanilla - 1 tsp.
For the frosting:
🩸Milk chocolate - 200 gr
🩸Walnuts - 50 gr

👩‍🍳Preparation:

✔️Combine the cottage cheese with coconut shavings, soft butter, powdered sugar, vanilla and everything is combined into a homogeneous mass.Then we make the cheesecakes and place them in the freezer for 30 minutes. Melt the milk chocolate in a water bath and mix well with vegetable oil. If desired, we can add chopped nuts. Pour the chocolate into a narrow glass and glaze the cheesecakes (put the cheesecake on a small knife), the glaze hardens very quickly (about a minute).

Chocolate cottage cheese cake 🥮

🍫Ingredients

✔️200 grams of flour (rice/wholemeal)
✔️50g butter (coconut/cream)
✔️3 tsp. cocoa
✔️2 eggs
✔️Sweetener (sugar)
✔️0,5 tsp. baking powder
✔️600gm 5% cottage cheese
✔️20g corn starch

👩‍🍳Preparation:

🔪The butter melt, mix with flour, yolks, cocoa and baking powder and sweetener.The dough should be loose, like crumbs.Whip the cottage cheese with a blender / fork until smooth, add the whites and sweetener! Put 1/3 of the chocolate chips in the mould and press down, put 1/2 of the curd mixture on top, then 1/3 again 1/3 of the chips and the rest of the filling and the last layer of chocolate.Cook at 180g. - 45 minutes! Let the cake cool.

Oatmeal with almond milk and caramelized bananas 🫕

🍌Ingredients:

🥄Oatmeal - 1 cup
🥄Almond milk - 2 cups
🥄Water - 2 c
🥄Banana - 1 pc
🥄Coconut oil - 2-3 t
🥄Salt - pinch
🥄Sugar - 1 t
🥄Nuts to serve: pecan, walnut

👩‍🍳Preparation:

🔪Fill the oatmeal with 2c of water and put it over medium heat so that the flakes open.When half of the water is boiled, add the almond milk.Add a pinch of salt and 1 tablespoon of sugar, cook the porridge over medium heat for another 10-15 minutes.Remove the porridge from the heat when the consistency is more liquid than necessary. Cover with a lid and leave it, after 5 minutes the porridge will be the right consistency and stay as long as necessary.Make the filling cut the banana into circles - crush the nuts in a mortar or just chop them.Caramelize the bananas heat the coconut oil with the cane sugar and add the bananas. Stir well so they caramelize completely.Serve the porridge: place in your favorite deep bowl, top with bananas and nuts. If desired, you can sprinkle with honey.
