Ingredients (2 portions):

❤️ 150 g quinoa
❤️ 4-6 fresh figs
❤️ 1 pack of feta (about 200 g)
❤️ 1 handful of walnuts
❤️ 1 pack of arugula (about 100 g)
❤️ 2 tbsp olive oil
❤️ 1 tsp honey
❤️ Salt to taste

Preparation:
1️⃣ Cook quinoa: Cook according to package instructions in lightly salted water and let it cool slightly.
2️⃣ Prepare ingredients: Cut figs into small pieces, dice feta, and roughly chop walnuts.
3️⃣ Arrange arugula: Lay out on a large plate or in a bowl.
4️⃣ Quinoa & toppings: Distribute quinoa on the arugula, then add figs, feta, and walnuts.
5️⃣ Dressing: Season with salt, olive oil, and a touch of honey.
6️⃣ Mix & enjoy: Mix everything gently and serve immediately.

A simple, aromatic oven dish with creamy Halloumi, fresh spinach, juicy tomatoes, and a hint of sweetness & spiciness – perfect for weeknight cooking or entertaining guests!

Ingredients (2 servings):
❤️ 1 pack of fresh spinach
❤️ 100 g Orzo (Risoni / rice noodles)
❤️ 1 handful of cocktail tomatoes (whole)
❤️ 5–6 dried tomatoes in oil
❤️ 200 ml water
❤️ 1 pack of Halloumi (about 200 g)
❤️ 1 teaspoon of honey
❤️ 1 pinch of chili flakes
❤️ 2 tablespoons of olive oil

Preparation:
1️⃣ Prepare the oven: Preheat to 200 °C top-/bottom heat.
2️⃣ Spinach & Orzo: Place spinach in a baking dish, sprinkle Orzo evenly over it.
3️⃣ Add tomatoes: Distribute whole cocktail tomatoes and dried tomatoes on top.
4️⃣ Add water: Pour everything with 200 ml of water over it.
5️⃣ Halloumi & toppings: Slice Halloumi, place it on the mixture, and top with honey, chili flakes, and olive oil.
6️⃣ Bake: Bake for about 25–30 minutes until the Halloumi is golden brown.
7️⃣ Done & enjoy: Mix everything, optionally add fresh herbs or a splash of cream.

🥟 Gyoza Soup with Pak Choi, Mushrooms & Creamy Peanut-Coconut Broth

For 2 servings


Creamy, spicy, filling – an Asian comfort dish that's on the table in under 30 minutes.

Ingredients
❤️12 Gyoza (6 per serving)
❤️1 Pak Choi, halved lengthwise
❤️1 handful of mushrooms (e.g., shiitake or button mushrooms), quartered
❤️2 eggs (size M)
❤️400 ml coconut milk
❤️200 ml water
❤️2 tbsp peanut butter
❤️1–2 tsp Gochujang (depending on desired spiciness)
❤️2–3 tbsp soy sauce
❤️2–3 tbsp roasted sesame oil
❤️Fresh coriander, chili, and lime slices for garnishing

Preparation
1️⃣ Boil the eggs:
Add the eggs to boiling water, cook for 6:30 minutes, then rinse under cold water and peel carefully.

2️⃣ Sauté the vegetables & Gyoza:
Prepare the Pak Choi and mushrooms.
Heat the sesame oil in a large pan.
Sauté the Pak Choi, mushrooms, and Gyoza under a lid until the Pak Choi is soft.
Remove the Pak Choi from the pan, remove the lid, and fry the Gyoza and mushrooms until they're crispy.

3️⃣ Prepare the broth:
Add the coconut milk, water, peanut butter, Gochujang, and soy sauce to a pot, stir well, and heat until the broth is creamy.

4️⃣ Serve:
Place the Pak Choi, mushrooms, and Gyoza in deep plates.
Halve the eggs and add them.
Pour the hot broth over them.
Garnish with fresh coriander, chili, and lime slices.

Ingredients:
❤️250g spaghetti
❤️200g cherry tomatoes, halved
❤️1 small red onion, thinly sliced
❤️2–3 cloves of garlic, minced or sliced
❤️2 tbsp olive oil
❤️Salt and black pepper to taste
❤️3 tbsp tomato paste
❤️200 ml water
❤️100g grated cheese (mozzarella or your favorite)

Instructions:

Preheat your oven to 180°C
Place the uncooked spaghetti in a baking dish.
Drizzle with olive oil and add the halved cherry tomatoes, sliced red onion, and garlic.
Season with salt and pepper, then mix everything gently to combine.
In a small bowl, mix the tomato paste with the water until smooth, then pour it evenly over the spaghetti.
Sprinkle the grated cheese on top.
Cover with foil and bake for about 30–35 minutes. Then uncover and bake for another 10 minutes, or until the cheese is golden and bubbly.

Instructions:

❤️ 2 large potatoes

❤️1/3 tsp salt
❤️Black pepper — to taste
❤️Your favorite seasonings
❤️Fresh dill, finely chopped (optional, but recommended)

Instructions:
Peel and dice the potatoes, then boil until soft.
Mash with a fork until smooth.
Add corn starch, salt, pepper, seasonings, and fresh dill. Mix well until you get a smooth dough.
Roll the mixture out on a board or parchment paper.
Cut into fun shapes using cookie cutters or a knife.

Mango Mousse Cake 🥭🍰 #SweetSummerTreats ☀️

Ingredients:
❤️3/4 cup whipping cream
❤️1/2 cup mango puree
❤️1/3 cup fresh cream, warm
❤️1 cup (175g) white chocolate, chopped
❤️8 inch vanilla cake
❤️1/3 cup mango milkshake, for soaking
❤️Mango jelly
❤️Mango slices, for garnish
❤️Mint leaves, for garnish

Method:
❤️ Add whipping cream in a bowl and whip using an electric mixer till stiff peaks.
❤️ To make the white chocolate ganache, start by heating fresh cream in a saucepan set over medium heat. Once it comes to a slight simmer, immediately take it off the heat and pour over 1 cup of chopped white chocolate.Mix till its smooth and lump free. Let it come to room temperature.
❤️ Now, add the mango puree and cooled white chocolate ganache to the whipped cream and whisk well until everything is nicely incorporated.
❤️ ⁠Take an 8-inch springform pan and lay vanilla sponge carefully at the bottom.
❤️ Pour mango milkshake evenly all over the sponge and let the sponge soak it.
❤️ Now, take the mousse filling and spread it evenly over the sponge layer. Tap the pan a few times to get rid of any air bubbles. Refrigerate for 4-6 hours or overnight.
❤️ ⁠Meanwhile, make mango jelly as instructed on the packet and set it in a 5-inch cake ring or round mould with is smaller in size from the springform pan.
❤️ ⁠Once the jelly and mousse is set, carefully place the jelly on top of the mousse cake and garnish with thin slices of mango and mint leaves all around.

Ingredients:
❤️1 (16 ounce) container Driscoll’s strawberries
❤️18 graham crackers
❤️1/2 cup chocolate chips, melted
❤️1 container non-dairy whipped topping
❤️1/4 cup peanut butter

Method:
❤️ Start by cutting the leaves off the strawberries, then slice them. Set the sliced strawberries aside while you assemble the frozen s’mores.
❤️ Line a 9x9-inch baking dish with parchment paper, then line the bottom of the pan with an even layer of graham crackers.
❤️ Pour the melted chocolate on top of the graham crackers and spread it into an even layer.
❤️ Transfer the whipped topping on top the chocolate and spread it into an even layer. Place the sliced strawberries in an even layer on top of the whipped topping, then spread the peanut butter on top of the strawberries.
❤️ Then, arrange the remaining graham crackers in an even layer on top of the peanut butter. Transfer the baking dish to the freezer for at least one hour or until firm, then remove from the freezer and cut into bars.

🧾Three Cheese Zucchini Rollatini ❤️🍽

Ingredients:

❤️ 2 medium zucchini
❤️ 200 ml tomato sauce/marinara
❤️ 180 g ricotta cheese
❤️ 30 g grated parmesan cheese
❤️ 120 g grated mozzarella cheese
❤️ 1 medium egg
❤️ 2 cloves garlic
❤️ 5-7 fresh basil leaves
❤️ 1/4 teaspoon each salt & black pepper, plus more salt for the zucchini noodles

Instructions:
❤️ Preheat oven to (220C)
❤️ Slice zucchini: First, removes stems from zucchinis and carefully use a mandoline to slice into 1/8 inch thin pieces (lengthwise). If using a knife, carefully try to slice them as close to 1/8 inch as possible.
❤️ ⁠Salt and quick-bake zucchini: Then lay zucchini noodles flat on a baking tray and dust with salt to help “sweat” excess moisture from noodles for about 5 minutes. Then bake zucchini for 1 minute *this helps soften them to roll properly and removes even more moisture*. Remove from oven and thoroughly pat dry with a paper towel. Note: if zucchini slices are thicker (especially if sliced by hand and not with a mandoline slicer) you may have to bake them for several minutes.
❤️ ⁠Mix ricottta filling ingredients: in a bowl, stir together ricotta, parmesan cheese, chopped basil, minced garlic, egg, and salt & black pepper.
❤️ ⁠Prepare baking dish: in a baking dish or casserole dish, spread (or more if needed) of tomato sauce. Set aside.
❤️ ⁠Fill and roll-up zucchini: Overlap two zucchini slices to create one larger piece. Spread 1 Tablespoon of ricotta filling evenly over zucchini noodles, then gently roll up. Place the fold of the rollatini on the bottom to prevent it from unrolling. Arrange in baking dish with tomato sauce and repeat until noodles and ricotta filling are used up.
❤️ ⁠Then spoon 1-2 Tablespoons of tomato sauce over top of each rollatini. Add mozzarella and parmesan cheese over top. Then bake uncovered for 20-25 minutes, or until cheese is browned and zucchini is cooked.

Serve with fresh basil and enjoy!

Healthy no bake lemon bars!🍋☀️

Recipe:
🍋
❤️130g almond flour
❤️60g oat flour or desiccated coconut
❤️20g butter
❤️Zest of a lemon
❤️Juice of half a lemon
❤️2-3 tbsp maple syrup
❤️White chocolate to top

Method:
Melt the butter and add all of the ingredients to a food
processor
Blend until combined
Transfer to a lined container and firmly press down
If adding the chocolate- melt and spread
Top with extra lemon zest
Slice & enjoy!!

Ingredients:
❤️2 lb chicken breast 🍗
❤️Salt and pepper to taste 🧂
❤️3 tablespoons flour 🌾
❤️1 tbsp smoked paprika 🌶
❤️2 tablespoons butter 🧈
❤️2 tablespoons olive oil 🫒
❤️3 garlic cloves 🧄
❤️2 shallots 🧅
❤️1 sprig of cherry tomatoes 🍅
❤️1/4 cup sundried tomatoes 🍅
❤️1/4 cup parmesan cheese 🧀
❤️1 teaspoon Italian oregano 🌿
❤️1 cup chicken broth 🍲
❤️1/2 cup white wine 🍷
❤️2 cups heavy/whipped cream 🥛
❤️2 cups fresh baby spinach 🥬

Steps:
❤️ Season chicken with salt, pepper, and smoked paprika. Coat with flour.
❤️Heat butter and olive oil in a pan. Sear chicken until golden. Remove and set aside.
❤️Sauté garlic, shallots, and cherry tomatoes in the same pan. Add sundried tomatoes.
❤️Pour in white wine and chicken broth. Simmer and reduce.
❤️Stir in heavy cream, parmesan, and oregano. Cook until thickened.
❤️Add baby spinach. Return chicken to the pan and simmer until cooked through.
