Upside-Down Carrot Cake 🥕🍰

For the caramel:

In a saucepan, add 2 tbsp of sugar and stir once the sugar starts to melt.
At the end of cooking, add 1 tbsp of warm water and pour the caramel into the cake mold.

For the cake:
❤️30g white sugar
❤️40g brown sugar
❤️3 eggs
❤️200g grated carrots
❤️100g walnuts
❤️220 gr flour
❤️120g melted butter
❤️1/2 tsp salt
❤️1 packet baking powder

Instructions:
1️⃣ In a bowl, mix white sugar, brown sugar, and eggs well.
2️⃣ Grate 200g of carrots and add them to the bowl.
3️⃣ Add the melted butter, flour, salt, and baking powder, then mix everything together.
4️⃣ Slice carrots into rounds and place them in the cake mold on top of the caramel.
5️⃣ Pour the cake batter over the carrots.
6️⃣ Bake at 180°C for 40-50 minutes.

SUSHI BURGER ONIGIRAZU WITH SPICY TUNA 🍣

Ingredients (4 burgers):

❤️ 1 ½ cups sushi rice
❤️ 3 cups hot water
❤️ 8 nori sheets
❤️ 150g canned tuna (x2)
❤️ 1 red onion
❤️ 1 avocado
❤️ 1 cucumber
❤️ 1 carrot (sliced)
❤️ Philadelphia cream cheese
❤️ Sriracha sauce
❤️ Soy sauce (salty)
❤️ Mayonnaise
❤️ 1 tbsp rice vinegar

🔥 For the tuna mixture:
❤️ 3 tbsp mayo
❤️ Sriracha (to taste)
❤️ Chopped red onion

🥢 For the sauce:
❤️ 4-5 tbsp mayo
❤️ 3 tbsp soy sauce

Instructions:

1️⃣ Cook the sushi rice for 10-15 minutes, then let it cool in a bowl. Mix in 1 tbsp of rice vinegar.

2️⃣ In another bowl, mix the tuna with mayo, Sriracha, and chopped red onion.

3️⃣ Prepare the sauce by combining mayo and soy sauce in a bowl.

4️⃣ Place a sheet of nori on a flat surface and spread a small handful of rice in the center.

5️⃣ Add 2 tbsp of the tuna mixture, sliced cucumbers, a dollop of cream cheese, avocado slices, more tuna, a drizzle of the prepared sauce, and carrot slices.

6️⃣ Top with another small handful of rice.

7️⃣ Fold all four corners of the nori sheet towards the center to wrap the filling. Then, place another nori sheet on top and flip it over.

8️⃣ Wrap it tightly with plastic wrap to shape it into a burger.

9️⃣ Cut in half and enjoy!

Juicy and tender eggplant rolls filled with seasoned ground meat


🛒 Ingredients

❤️ 3–4 eggplants, sliced
❤️ 200–300 g ground beef
❤️ 1 onion, finely chopped
❤️ 1 tbsp tomato paste
❤️ ½ cup hot water
❤️ 40 g butter
❤️ 1 tsp salt
❤️ 1 tsp black pepper
❤️ 2 tsp paprika
❤️ 1 tsp garlic powder
❤️ Tomato sauce (for baking)
❤️ Extra butter (for the sauce)
❤️ Plain yogurt (for serving)

👩‍🍳 Instructions
1️⃣ Slice the eggplants.
2️⃣ Lightly brush with oil and bake at 180°C (356°F) for 20–25 minutes, until soft.
3️⃣ Melt the butter in a pan and sauté the onion. Add the ground beef and cook until browned.
4️⃣ Season with salt, black pepper, paprika, and garlic powder. Add the tomato paste and hot water, then simmer until thickened.
5️⃣ Place some cooked meat on each eggplant slice and roll it up.
6️⃣ Thread about 5 rolls onto a skewer, place them in a baking dish, and pour tomato sauce mixed with water over them.
7️⃣ Bake for 5–10 minutes at 180°C (356°F).
8️⃣ Spread plain yogurt on a serving plate, arrange the eggplant rolls on top, and drizzle with melted butter

👩‍🍳 Instructions
1️⃣ Marinate the chicken:
In a bowl, combine the chicken strips, olive oil, seasonings, tomato paste, and lemon juice. Mix well and let marinate.

2️⃣ Cook the chicken:
Heat a pan over medium-high heat and cook the chicken until golden brown and fully cooked.

3️⃣ Prepare the garlic sauce:
In a bowl, mix the yogurt, mayonnaise, minced garlic, and parsley until smooth.

4️⃣ Make the sumac onions:
In another bowl, combine the red onion, sumac, parsley, and lemon juice. Toss well.

5️⃣ Assemble the wrap:

Spread garlic sauce over the wrap.

Add the cooked chicken.

Top with sumac onions.

Add harissa (or Sriracha), cucumber, tomato, and fries.

Pepper Potato Salad

Ingredients:

❤️ 12-13 small potatoes
❤️ olive oil
❤️ 1 tsp Black pepper
❤️ 1 tsp Paprika
❤️ 6 tablespoons yogurt
❤️ 3 tablespoons mayo
❤️ 1/2 lemon juice
❤️ Salt
❤️ 1 whole cucumber
❤️ 30 g green onions
❤️ 30 g fresh parsley
❤️ 30 g fresh dill
❤️ 1 red onion
❤️ 3 - 4 garlic cloves

Instructions:
1️⃣ Place the small potatoes in a pot of water and boil for 15–20 minutes.
2️⃣ Transfer them to a baking tray and gently smash them using a glass.
3️⃣ Drizzle olive oil on top, then add paprika and black pepper.
4️⃣ Bake in the oven at 200°C (350°F) for 30–40 minutes until golden and crispy.
5️⃣ In a large bowl, add the yogurt, mayonnaise, lemon juice, salt, and pepper. Mix well.
6️⃣ Add the chopped cucumber, green onions, parsley, dill, red onion, and garlic. Mix everything together.
7️⃣ Once the potatoes are done, cut them into pieces and add them to the salad.

HONEY BBQ CHICKEN TACOS with Garlic Parsley Butter🌮

Ingredients (for 6-7 tacos):

❤️ 2 big chicken breasts (about 400 - 500g)
❤️ 1 red pepper
❤️ 1 red onion
❤️ Tortilla wraps (10–15 cm)
❤️ Shredded mozzarella
❤️ 3 tbsp BBQ sauce
❤️ 1 tbsp honey
❤️ BUTTER SAUCE : Melted butter, Garlic powder and Fresh parsley

SEASONING:
❤️ 1 tsp chili flakes
❤️ 1 tsp salt
❤️ 1 tsp black pepper
❤️ 2 tsp paprika

Steps:
1️⃣ Slice the chicken and add the seasoning.
2️⃣ In a hot pan with a bit of oil, sauté the chopped onion and red pepper on one side, and cook the chicken on the other.
3️⃣ Once the chicken is cooked, remove it and shred it using two forks.
4️⃣ Add it back into the pan with the veggies, then stir in 3 tablespooon of BBQ sauce and 1 tablespoon honey.
5️⃣ For each tortilla wrap, are the one side with the mix.
7. Remove all the mix and to the same pan, put the other side of the wrap, then add mozzarella, and the chicken mix and fold in half.
6️⃣ Toast the tсacos on both sides with the butter

7️⃣ Crispy outside, juicy inside, they’re ready to devour! Enjoy 🙂‍↕️🫶

Ingredients:

❤️ 400–500g chicken breast
Chicken seasoning:
❤️ 2 tbsp fajita seasoning
❤️ 1 tbsp paprika
❤️ 1 tsp oregano
❤️ 1 tsp garlic powder
❤️ Salt & black pepper to taste
❤️ Olive oil

❤️ 1 onion (sliced)
❤️ 2 peppers (sliced)
❤️ 3 garlic cloves (minced)
❤️ 2 glasses of chicken broth (plus pasta water if needed)
❤️ 2 glasses of milk (any kind: dairy, soya, coconut…)
❤️ 300–400g cooked pasta
❤️ 150g cheese (cheddar & mozzarella mix)

Steps:
1️⃣ Season the chicken: In a bowl, drizzle olive oil over the chicken breast. Add fajita seasoning, paprika, oregano, garlic powder, salt & black pepper. Mix well.
2️⃣ Cook the chicken: In a large pan, cook the chicken until golden and cooked through. Set aside.
3️⃣ In the same pan, add sliced onions and peppers. Cook until soft. Add minced garlic and sauté for 1 min.
4️⃣ Pour in the chicken broth and milk. Simmer on low heat.
5️⃣ Add the pasta: Stir in the cooked pasta and let everything simmer together. Add pasta water if needed.
6️⃣ Add the cheese. Stir until melted into a creamy sauce.
7️⃣ Return the chicken to the pan. Mix well and adjust salt and black pepper if needed.
8️⃣ Serve & enjoy😊🫶

Ingredients : For 6-8 skewers

For the chicken marinade:

❤️ 700-800g chicken breast
❤️ 1 tbsp Skyr or plain yogurt
❤️ 1 tbsp olive oil
❤️ 1 tbsp smoked paprika
❤️ 1 tbsp garlic powder
❤️ 1 tbsp onion powder
❤️ Juice of ½ lemon
❤️ 1 tsp salt
❤️ 1 tsp black pepper
❤️ 1 or 2 tbsp grated parmesan
❤️ 1 tbsp dried parsley

For the sauce to coat the skewers after baking:
❤️ 50 to 70g butter
❤️ 1 tbsp chili flakes
❤️ 3 garlic cloves, finely chopped
❤️ 2 tbsp fresh parsley
❤️ 2 to 3 tbsp grated parmesan
❤️ A pinch of salt

Instructions:
1️⃣ Cut the chicken breasts into small, even cubes.
2️⃣ Place the chicken in a bowl.
3️⃣ Add Skyr, olive oil, smoked paprika, garlic powder, onion powder, lemon juice, salt, pepper, parmesan, and parsley.
4️⃣ Mix everything well to coat the chicken.
5️⃣ Let the chicken marinate for at least 1 hour (overnight for more flavor).
6️⃣ Thread the chicken pieces onto skewers.
7️⃣ Place the skewers on a grill pan or a baking rack over a baking sheet (to catch any drips).
8️⃣ Bake in the oven at 200°C (392°F) for 25 minutes, turning the skewers halfway through for even cooking.

Instructions for the sauce:
1️⃣ Melt the butter in a saucepan.
2️⃣ Add the garlic, chili flakes, parsley, parmesan, and a pinch of salt.
3️⃣ Let it melt gently and mix well.
4️⃣ Once the skewers are out of the oven, generously coat them with the sauce.

Ingredients:

❤️ 3 - 4 Bananas
❤️ 230 gr Puff pastry
❤️ Kadaif (shreded phylo dough)
❤️ 20 gr Butter
❤️ 3 tbsp Pistachio cream

On top:
❤️ Powdered sugar
❤️ Crushed pistachios

Here’s how I made it:
1️⃣ Take a banana and slice it down the middle (not all the way through).
2️⃣ Use a small spoon to scoop out a bit and create a hollow center.
3️⃣ In a pan, toast some kadaif (shredded phyllo dough) with butter until golden and crispy.
4️⃣ Mix it with a spoonful of pistachio cream.
5️⃣ Fill the hollow banana with the kadaif-pistachio mix.
6️⃣ Cut your puff pastry into long vertical strips.
7️⃣ Wrap the banana with the strips.
8️⃣ Bake at 180°C (350°F) for about 20–25 minutes or until golden.
9️⃣ Once baked, drizzle more pistachio cream on top, dust with powdered sugar, and sprinkle with crushed pistachios.
