Nettle Pesto 🌿
With one of the most nutritious wild Spring greens sprouting up and leafing out, now is a great time to harvest Nettles and make a recipe like this.
Feel free to modify with ingredients you have on hand.
And if you don’t have fresh nettles you can always rehydrate by covering a cup of dried nettles with water and letting it sit over night. Then strain well to press out any extra liquid (which can be enjoyed as tea).
This pesto stores well and can be frozen or placed in the fridge.
In a blender or food processor add:
1 cup fresh raw young stinging Nettle leaves, chopped
1-3 cloves of garlic
1/2 cup fresh, sweet Basil leaves
1/2 cup olive oil (and slowly add more for desired creamy consistency)
Pulse till smooth and then add:
1/2 - 1 cup walnuts
1/4 cup of grated Parmesan cheese
Salt to taste
