I am a huge fan of fennel and believe it is an under utilised vegetable. When it is in season I roast, braise and ferment it, and use it raw as I’ve done here. This easy yet delicious fennel salad deserves a place on every dinner table. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Simply serve it alongside some grilled fish or roasted meat. Mint pairs perfectly with fennel and is a very good place to start, but feel free to play around with other herbs of your choice.⠀⠀⠀⠀
