SO and SUCH both modify adjectives.

They are similar to VERY.

However, SO and SUCH show emotion.
(happiness😃, excitement🤩, anger😡, etc.)

VERY does not show emotion, and this is why it is a better choice for formal writing.

But how are SO and SUCH different?

A basic way to think about it is that they have the same meaning, but...

SO has the noun before it.
SUCH has the noun after it.
