How to make a Sourdough bread Starter
Ingredients
πΈ1 cup whole wheat flour
πΈ5-7 cups all wheat flour
πΈFiltered water
πΈStorage jar with breathable lid (not air tight)
Preparation
πΉDay 1: Add 1 cup whole wheat flour (you can also use rye flour) and 1/2 cup bottled water to a clean storage jar with a lid that isn't air tight. Stir to combine, then store at room temperature.
πΉDay 2: Remove about half of the starter (this should be about 4oz removed, and 4oz left). Feed the remaining starter with 1 cup wheat flour, and 1/2 cup Filtered water and stir. Place the lid back on the jar and store at room temperature
πΉDay 3: You may or may not see less activity today than yesterday, and that's OK! Just feed as you did yesterday and store at room temperature.
πΉDays 4-7: Continue to pour out half, feed with 1 cup wheat flour, and 1/2 cup filtered water, stir and store at room temperature once a day until the starter is ready.
πΉTo determine if your starter is ready, you want to look for two things; bubbles and volume. If there are a lot of bubbles and the starter is larger than it was the day before, it's probably ready. To test, drop a small amount into a bowl of water. If it floats, it's ready to go!
πΉOnce the starter is ready, you can use the amount you remove during a regular feeding as the base for your recipe. Discard it (or give it to a friend to use as their own starter) if you don't plan to bake. If you use it regularly, store at room temperature and feed daily.

Sourdough Bread Recipe
INGREDIENTS
πΈ1000 grams Bread flour
πΈ650 grams Filtered water
πΈ200 grams Active (leavened) sourdough starter
πΈ20 grams salt
Equipments
πΈ2 Proofing basket or 2 medium bowls
πΈFood scale
πΈ1 Large bowl
πΈParchment paper
πΈDutch oven
πΈScoring tool or a razor
PREPARATION
πΉIn a large bowl weigh out 1,000 grams of flour, 200 grams of active sourdough starter, 650 grams of warm filtered water, and 20 grams of salt. Wash your hands and give this a good mix. Don't add more flour despite it being sticky. You donβt want to knead the dough, you just want to combine all the ingredients together so there are no dry streaks of flour.
πΉclose the bowl with a lid and let the sourdough bread mixture rest for 1 hour. You donβt want a tight seal on the sourdough. You still want some air to circulate into the dough, to help ferment it. Yet you donβt want the dough to develop a hard crust either.
πΉStretch & Fold
Place your hands under the sourdough, and with both hands stretch the sourdough up as far as it will let you. Be gentle not to rip the dough, then fold it over to the middle of the bowl. repeat this process on all sides. PREPARATION
πΉIn a large bowl weigh out 1,000 grams of flour, 200 grams of active sourdough starter, 650 grams of warm filtered water, and 20 grams of salt. Wash your hands and give this a good mix. Don't add more flour despite it being sticky. You donβt want to knead the dough, you just want to combine all the ingredients together so there are no dry streaks of flour.
πΉclose the bowl with a lid and let the sourdough bread mixture rest for 1 hour. You donβt want a tight seal on the sourdough. You still want some air to circulate into the dough, to help ferment it. Yet you donβt want the dough to develop a hard crust either.
πΉStretch & Fold
Place your hands under the sourdough, and with both hands stretch the sourdough up as far as it will let you. Be gentle not to rip the dough, then fold it over to the middle of the bowl. repeat this process on all sides. Shaping Your Dough
πΉTake your first dough and with your hands stretch the sourdough out on a clean counter top into a circle It will be a little sticky, but make sure to not add any additional flour. if the sourdough is too sticky to work with use your bench scraper to help.
πΉTake one side of the sourdough and fold it over to the center, then fold over the opposite side.
πΉOnce the two sides are folded, roll the dough into a ball. then seal the ends. Tuck the ends underneath the dough to form a ball.
πΉAfter the sourdough is formed into a ball start to twist the dough on the table to create tension on the bottom of it. This helps to close up any open holes. Repeat the same process on the other dough.
πΉNow that your sourdough is shaped into a ball- lightly flour your proofing basket.flip your sourdough with the bottom facing up into your basket or bowl. Pinch to seal any holes. Dust the Sourdough ball with a little bit of flour.
πΉCover with saran wrap and place a tight lid on top, so air cant get inside. Repeat the same process for the other loaf.
πΉPreparing to Bake
Place a Dutch oven into the oven with the lid closed and preheat the oven to 500F
πΉTake your loaf out of the fridge and gently flip your dough onto parchment paper.
πΉScore the sourdough loaf using a sharp razor. Make one big score down the middle, leaving 1 inch of boarder on both sides. (top to bottom)
Baking Your Sourdough
πΉTake out the Dutch oven from the oven, Place the sourdough bread into the Dutch oven with the parchment paper, close the lid.
πΉPut the Dutch oven back into the oven, Bake for 30 minutes at 500F
πΉAfter 30 minutes remove the lid from the Dutch oven and lower your heat to 450F and bake an additional 3-10 minutes depending on how much color you want on your sourdough bread.
πΉTake out your sourdough bread from the oven, and place it on a cooling rack for 2 hours before you slice into it.
