Is there a course/book out there dedicated to Windows PrivEsc based on "Live off the Land" tradecraft?

I've done a few courses on privilege escalation recently as part of my preparation to OSCP later this year and all these sources have one thing in common: over-reliance on automatic diagnostic tools such as winPEAS, windows-exploit-suggester, MSF, and so on.

While this can be acceptable in the context of OSCP, it's frankly unsatisfactory when dealing with the real world. Windows defender on an updated machine blocks the execution of these tools right on the spot, like it's supposed to do. I'd be pissed if I had bought a Windows license and my copy executed these noisy tools without a hiccup.

I've found blog posts out there that detail some techniques using Windows native tools and I'm building a knowledge base inspired on them right now. I just needed to know... Is there an online course out there that teaches how to do this the right way with Live Off the Land techniques?
