I once spoke to an egg seller and she explained this theory to me.
They maintain equilibrium between the reactant eggs (eggs below) and the resultant eggs (eggs above) by the addition of a catalyst which serve as a source of pressure called the the equilibrium constant of pressure, Kp.
Kp= [forward reaction]/ [backward reaction] or
Kp = [Reactant] / [Product]
In other words, the catalyst used here is starch obtained from cassava π
