Ingredients:
๐ 100g rice
๐ฅฉ 40g soy medallions
๐ฅฃ 300ml vegetable broth
๐ฅ 1/2 avocado
๐ฑ 2 tbsp kidney beans
๐ฑ 2 tbsp chickpeas
๐ฝ 2 tbsp corn
๐ฅ 1 tbsp pickled ginger
๐ฅ 1/4 cucumber
๐ฅ 1 carrot
๐ง Salt, pepper
Sauce:
๐ง 1 garlic clove
๐ฟ 1 cm ginger
๐ถ 15ml soy sauce
๐ฅ 60g peanut butter
๐ง 20ml water
๐ถ 1/2 tsp chili flakes
Toppings:
โช๏ธ Sesame
๐ฅ Peanuts
๐ถ Chili
Preparation:
1. ๐ Cook rice.
2. ๐ฑ Soak soy medallions in vegetable broth, drain, then fry in oil with pepper.
3. ๐ฅ Cut vegetables.
4. ๐ฅฃ Mix all liquid ingredients for the sauce. Grate ginger and garlic, stir in with chili flakes.
5. ๐ฒ Assemble the bowl.
