* Open cocoa pods, extract beans.
* Place beans in containers, cover with banana leaves for 5-7 days.
* Spread beans under the sun (5-7 days).
* Roast dried beans at 120ยฐC (248ยฐF) until fragrant.
* Remove shells, collect nibs.
* Grind cocoa nibs into a paste.
* Heat and stir cocoa paste, adding sugar and milk (if desired), until smooth.
* Cool and heat chocolate to stabilize crystals.
* Pour into molds, cool to solidify.
