My take on this:
If you need a discord replacement right now, use mumble + jitsi
If you can wait a bit, fluxer is likely to be the best option in the long term (they have plans for selhosting docs, federation, threads, mobile apps, etc.)
If you really need e2ee, none of these options are good, not even matrix, just use delta chat or simplex chat
