Don’t think I’ll sell bread. (But if you insist we made them on most Mondays) So providing the #recipe here… After many many recipes & trial & error, my dad is happy to enjoy this bread. Even without using tangzhong or yudane, it is super super soft, even on the 4th day. Recipe uses a 13” pain de mie loaf pan. Provided the baker’s ratio for adjustment to smaller pan. Enjoy!

Sourdough Wholemeal Bread
- 160g sourdough starter 40%
- 195g cold water 48.75%
- 1 egg
- 1 tsp yeast 0.1% (opt)
- 30g milk powder 7.5%
- 290g bread flour 72.5% (300g if not using gluten)
- 100g wholemeal flour 25%
- 1 tbsp gluten 2.5% (opt)
- 10g salt 2.5%
- 40g of honey 10%
- 35g of oil 8.75%

Knead until gluten developed.
Bulk fermentation for 3hr or until double.
Shape into your pain de mie.
Final proof for 1.5hr or 1in from the top of the pan. Cover with lid. Preheat oven at 180c.
Bake for 20min. Remove lid & bake for another 10min.

When I was young, we ate #steamboat only on the eve of LNY at my grandma’s place. She used the charcoal kind & there’s only 1 soup base. As kids, we loved it, throwing the ingredients into the boiling soup & eating whatever we wanted.
Steamboat has evolved over times in Singapore with the influx of different nationalities. And it can be eaten almost any other day. 😅 Whenever & whatever type we eat, don't you agree that it shouldn't be eaten alone. In fact, it makes most sense to eat with family &/or friends. That's why it's called #reunion dinner, reuniting of hearts at the table.
Here is my #homemade mala soup base which makes my colleagues wanting to return. The trick is to make it super spicy 😉 And it's superb with herbal chicken base.

Fulfilled an order of our Indonesia Curry Chicken. It is different from Singapore or Nyonya’s, it’s thick with spices. A bit more like the canned Ayam curry chicken.
