🔪 Ingredients:

- Young cabbage — 500 g.
- Egg — 3 pieces.
- Sour cream — 5 tablespoons.
- Mayonnaise — 3 tablespoons.
- Flour — 6 tablespoons.
- Salt — 1 teaspoon.
- Baking powder — 2 teaspoons.
- Dill — 1/2 bunch.
- Sesame (for sprinkling)

📙 Recipe:

1. Cut the cabbage, salt it, and knead it lightly. Add finely chopped vegetables.
2. Beat the eggs into a homogeneous mass.
Add the remaining ingredients and knead the dough.
3. Grease the mold with butter and put the cabbage in it. Pour the dough over it
4. Place the mold in a preheated oven at 180 degrees and bake for 30 minutes until a golden crust forms.

Pan-Seared Cod in White Wine Tomato Basil Sauce

Ingredients:

4 tbsp olive oil
1/4 tsp red pepper flakes
3 cloves garlic, finely minced
200 gr cherry tomatoes, sliced in half
1/4 cup dry white wine
1/2 cup fresh basil, chopped
2 tbsp lemon juice
1/2 tsp lemon zest
1 tsp sugar
4 fillets fresh cod
salt and pepper

Instructions:
 
Heat 2 tbsp oil over medium heat. Add red pepper flakes and garlic and saute for 1 minute.
Add the cherry tomatoes and cook, stirring occasionally, 9 to 12 minutes.
Add the white wine, then stir in the basil, lemon juice, lemon zest, salt, sugar, and pepper and cook for 2 minutes. Set aside until needed.

Heat 2 tbsp oil in a large saute pan over medium heat. Pat the cod dry with paper towels. Then season both sides of cod with salt and pepper.
Cook the cod until golden brown, about 3 minutes. Carefully flip the cod over and continue cooking for another 3 to 4 minutes.
Pour the sauce over the cod and cook for a minute.
Serve immediately.

Avocado Egg Salad Toasts

Ingredients:

For the egg salad:
6 hard-boiled eggs, peeled and halved
the flesh of 1 ripe avocado
2 to 3 tablespoons fresh lemon juice
1 tablespoon white balsamic vinegar
1 teaspoon salt
freshly cracked black pepper
1/4 teaspoon paprika
1 teaspoon mustard
1/4 to 1/2 cup finely chopped chives

4 slices bread, toasted
a handful of sprouts

Instructions:

In a large bowl, mash together the eggs, avocado, 2 tablespoons of the lemon, vinegar, salt, pepper, paprika, and mustard using a pastry cutter or potato masher or whatever tool you have that will work best. Taste. Add the remaining tablespoon of lemon juice if you wish. Add the chives. Mix again. Taste. Adjust flavor as necessary with more salt, pepper, acid, etc.

To make the toasts, mound as much avocado-egg salad as you wish onto each slice of toast. Top lightly with the sprouts. Serve.

Baked Chicken Thighs

Ingredients:  
8 chicken thighs, bone in, and leave the skin on but trim excess fat
salt
3 medium yellow onions, thinly sliced
1 ripe tomato, sliced into rounds

For the chicken rub:
5 tablespoons tomato paste
60 ml olive oil
1 lemon, juice of
4 garlic cloves minced
1 teaspoon dry oregano
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon black pepper

Instructions:
Heat oven to 200 degrees C.
Season the chicken thighs with salt on both sides.
Combine the rub ingredients and mix well.
Rub the chicken with the tomato rub on both sides, applying underneath the skins first.

Prepare a baking dish. Brush the bottom of the dish with olive oil. Arrange most of the sliced onions on the bottom. Arrange the chicken on top of the onions. Now add the rest of the onions and the sliced tomatoes between the chicken thighs. Pour in about 50 ml of water from the sides of the baking dish.
Bake in the middle of your heated rack for 1 hour or so.

3-Ingredient Parmesan Cookies

Ingredients:
100 g cold unsalted butter, cut into small chunks
100 g flour
100 g Parmesan cheese , finely grated
fresh rosemary & thyme leaves, finely minced, (optional)
black pepper, (optional)
1 small beaten egg

Instructions:
In a stand mixer over medium-low speed, mix together the butter, flour and Parmesan cheese, until finely crumbly.
Add optional fresh chopped herbs and black pepper to taste, and knead until you form a dough.

Divide the dough in half. Roll each half into an uniform log, about 3 cm in diameter.
Wrap the 2 cylinders into cling film, and refrigerate for 30 minutes.

Preheat the oven to 180°C.
Cut each log into 1 cm thick rounds.
Arrange the cookies on a baking tray lined with parchment paper.

Brush the surface of each cookie with a beaten egg, and sprinkle a tiny amount of extra grated Parmesan or chopped fresh herbs on top.

Bake for 10 minutes, or until the cookies are golden on top.

Cool on a baking rack.

Pork Tenderloin Recipe

Ingredients:

2 pork tenderloins (about 500 gr each), trimmed

the sauce: mix together 3 tbsp sesame oil + 2 tbsp soy sause + 1 tbsp honey + 2 minced gloves garlic

500 gr green beans, stems trimmed
700-800 gr small potatoes cut in half
3 tbsp olive oil
salt and ground pepper
2 tbsp butter softened
1 tbsp freshly minced chives
1 garlic clove minced into paste


Instructions:

Preheat oven to 220 degrees C. Greese the baking sheet. 

Combine green beans with 1 tbsp of olive oil, 1/4 tsp of salt and 1/4 tsp of freshly ground pepper. Arrange green beans in center of baking sheet. 

Toss potatoes with 2 tbsp of olive oil, 1/4 tsp of salt and 1/4 tspn of ground pepper. Arrange on the baking sheet.

Lay tenderloins, not touching, over green beans and brush with the sauce, sprinkle lightly with salt and pepper. Roast for 20 to 25 minutes

Combine butter, chives, garlic, salt and pepper. When cooked, top each tenderloin with garlic herb butter
