Mangoes are harvested either by hand for reachable fruit or with nets and sticks for higher branches, ensuring gentle handling. After harvest, mangoes are inspected, washed, and sorted using roller-bar machines to remove unripe or diseased ones. They are then prepared for market or juice production, involving pre-heating to remove enzymes, peeling, pulping, and degassing to extend shelf life. Homogenization and bottling follow, ensuring even particle size and secure packaging. For frozen mangoes, a blanching process preserves color and flavor, followed by dicing, quick freezing with fluidized monomer machines, and final inspection before packaging to maintain quality.
