These questions of revolutionary transition without either permitting a counter-revolution or forming a new state are burning questions for the 21st century after the failures of 20th century revolutions. - stingray-equivalent devices exist for LTE, so forcing a protocol won't necessarily protect you
- what they do is collect your device's unique ID, called an IMEI, or your subscriber ID, called IMSI. Those can later be matched to your identity if you brought a non-anonymous non-burner
- typically, stingray devices don't supply backhaul, which is to say, they usually won't give you any kind of network access after you connect. So they can't monitor your traffic because there won't be any
- if you use a VPN or Tor, nobody listening can tell what services you're even connecting to (like telegram, etc) much less your username
- all of the previous doesn't matter if your phone itself is bugged in some way, and there's no lack of theories to that effect
- most keyboard apps collect your data, and therefore have the potential to keylog you. If you're on Android, "AnySoftKeyboard" doesn't connect to the internet and is a fairly privacy-friendly choice, last I checked

The above is based on work in a relevant field, recollection of wikipedia articles, and general background knowledge. I could still be wrong, so don't hesitate to double check that info.
