- gills are packed with blood capillaries
- this blood contains oxygen,
- oxygenated blood contains oxyhaemoglobin
- oxyhaemoglobin gives it a red colour
- after the fish dies, the oxyhaemoglobin turns into deoxyhaemoglobin
- deoxyhaemoglobin is more dark-ish brown colour
- so if the fishes gills are red / pink it indicates the fish was recently caught, and is still fresh !
