مراقبة مدة الصلاحية على المنتوجات الغذائية لا تعني شيئا
نحن لا نعتمد على القياسات الدولية International Standards، والشروط الصحية Food sanitation ومدة الصلاحية Shelf-life كمؤشرات لسلامة المواد الغذائية Food safety، لكننا نعتمد على ماهية المواد الغذائية، هل هي مغيرة وراثيا أم طبيعية، وعلى أساليب تصنيعها ومصدرها، وهل تحتوي على مركبات ملوثة أو مضافة أثناء التصنيع والإنتاج، ونحن لا نتكلم اليوم عن الجراثيم التي لازالت السلامة الصحية تفزع الناس بها، فخضوع جميع المواد الغذائية لأساليب المعالجة بالحرارة كالبسترة والتعقيم، وشروط تخزينها تحت البرودة، يجعل مشكل الجراثيم غير ذي أهمية قصوى، لكننا نعني بالسلامة الصحية الخطر الكيماوي والهرموني والجيني، ولذلك يجب وضع معلومات حول ماهية المنتوج الغذائي، وسلامته من هذه الأخطار: وهي الخطر الجيني Genetic hazards؛ أي التغيير الوراثي، والخطر الكيماوي Chemical Hazards؛ أي المبيدات والمضافات الغذائية ومواد التعليب والمعادن الثقيلة، والخطر الهرموني Hormonal Hazards؛ يعني احتمال وجود هرمونات في بعض المنتوجات الحيوانية والنباتية، ونظيف كذلك سلامة المواد الغذائية من المضادات الحيوية Antibiotics خصوصا الحيوانية كاللحوم والألبان والبيض، ولا ننسى التلوث بالإشعاع لأن المواد المستوردة قد تكون خضعت للتشعيع في الدول المصدرة، نظرا للسماح في هذه الدول بتشعيع كثير من المواد الزراعية على الخصوص Crops irradiation.
ربما تكون بعض المواد الغذائية موضوع إشهارات ونصائح على أساس أنها خالية من الكوليستيرول، وفيها الأملاح والفايتمنيات، لكن هذه المواد قد تكون مغيرة وراثيا، أو معالجة بالكيماويات، أو ربما تحتوي على هرمونات أو ملوثة بالمضادات الحيوية، أو مشععة. ولذلك نرى أن التركيز على قانون مدة الصلاحية ليس مهما بالنسبة للمستهلك، لكن ما يحتوي عليه المنتوج الغذائي من الأخطار السالفة الذكر هو الأهم، ومدة الصلاحية التي يراقبها المستهلك كلما اشترى منتوجا ليست كافية، وليست مهمة بل ربما تغطي على أشياء أخرى، لا يبينها الصانع على التعليب، كمصدر المادة هل هي مغيرة جينيا أم طبيعية (Genetically Engineered Foods)، وكذلك طبيعة المضافات الغذائية بتسميتها وليس بالشفرات Exxx.
مدة الصلاحية المبينة على المادة لا تعني أنها مضمونة ومؤمنة من الخطر، وانتهاؤها لا يعني أن المادة غير صالحة للاستهلاك، إذا كانت مدة الصلاحية منتهية فذاك يعني أن جودة المنتوج نقصت بنسبة معينة فقط، ولا يعني بالبتات أن المادة أصبحت خطيرة، أو غير صالحة للاستهلاك. لكن تظاهر بعض الناس بأنهم أصبحوا قادرين على اختيار المواد من خلال مراقبة مدة الصلاحية المبين على المواد هو المشكل.
