This stuff has become real nice after 9 months of ageing, very smooth, nice biscuit and baked goods flavors, caramel is also coming through as well as some dried dark fruit notes and a smidge of coffee or cocoa roast aroma
all around a very pleasant whiskey and a good addition to my recipe book

The harvest is bountiful this year
4 crates of apples
1.5 crates of pears
1 crate of plums
A bit less than 1 crate of grapes

In that whole box of white grapes there were maybe 2 handfuls of red grapes and they made the entire 13 liters of grape juice turn pink

ive been hard at work processing this fruit
filled my small fermenters with the grapes, filled up two fermenters with all the plums to make slivovitz, filled one fermenter just with those red apples and another one with the yellow pears and one box of those green apples
ran out of fermenters so the last boxes of pears and apples will have to wait a bit before i juice them
