I noticed people asking why we import carrots at all. Tbf seasonality is part of the issue, we could supply fresh carrots for about 3-5 months of the year easily enough, but we ship in the rest of them out of season.
The way people figured out how to store veg year round was incredibly simple: a root cellar.
A properly planned root cellar will remain at 4ยฐc and 100% humidity all year round, making it the absolute ideal place to store, as the name suggests, roots (and tubers).
A fridge isn't great for storing roots as they have very low humidity (to inhibit other bacteria) and is why carrots go floppy, and nobody likes a floppy carrot.
The poormans way that was done in Ireland was to dig a big deep hole, line it with rushes and fill it with spuds, then cover the whole pit with another thick layer of rushes.
