Isso é possível graças ao Floresta UTREEXO, uma forma de node que guarda todos os blocos sem precisar ter todo o histórico de UTXOs (chainstate). No lugar, é atualizado uma hash compactada que, além de conseguir reconhecer e validar as UTXOs passadas, se reorganiza ao receber movimentações futuras.
O app em questão foi criado por brasileiros e se chama Mandacaru. Você consegue baixar a versão mais recente dele no Github:
