We install the new firmware (20.3.5) on Redmi Note 7 (lavender) in the usual mode, but in order to have access to user data from the recovery, it will be necessary to change the recovery (old versions cannot handle data decryption).
Recommended TWRP-3.4.1B-0305-REDMI_NOTE7-CN-wzsx150.img and above versions. Latest TWRP
