In relation to courgettes or pumpkins: The turned-over grass will eventually start to seek the light again and in order to prevent a weed problem you would probably have to cover the bed with such a foil (that's not needed for potatoes).

If you want an alternative to potatoes based on that soil, I would probably do it as shown in the photo. Not all plants can handle fresh horse manure like carrots or onions, so I would leave that out. The fine-grained compost is a better choice. Nevertheless, the horse manure would be good for the pumpkins or courgettes. The cardboard underneath the compost prevents the grass from gaining momentum and taking over!
