For other more sensitive plants, I would perhaps start in a similar way (to gain height), but then add purchased compost on top in which the carrot or similar will grow. To prevent things from sliding down the sides, a frame might be an advantage. In summary, a mixture between folding over the sod and then topping up with compost in the style of 'No dig'. »Nothing grows in soil with a low compost content!!
