Couscous is a famous dish the people of Morocco eat every Friday. You can also find this dish to be popular in Algeria and Tunisia as well. But there is no doubt that Couscous was eaten by the Andalusian people before the fall of Granada.
Lisan Al-Din Ibn Khatib al-Gharnati al-Andalusi (d. 776H) mentioned:
โTharid (a type of broth) and what is similar to it, is from the food of the western lands (Morocco, al-Andalus, etc) and is called couscous.
This type of food spread in the open countryside and desert lands within tribes of people and young because there is no need to use an oven to cook it. And eating a little of it makes you full and it easy to be digested.โ

If one were to take a visit to Morocco or any one of the North African countries of the โMaghribiโ region, they will find many people wearing a common leather slipper.
It is worn in all occasions such as a walk to the mosque or even at weddings. A yellow color is the most common with men but other colors worn as well.
Muhammad Busalam, a historian of Andalusian/Moroccan history mentioned in his one of his books, the history of this slipper.
He mentions that the origin of the slipper was from the east, such as from Syria, as was part of the old customs of the people.
As the early Muslims started to expand to other countries and the Islamic civilization started to grow from east to west, the slipper made its way to the land al-Andalus.
The Andalusian changed the way of the slipper and even started to call the slipper as โBalgaโ ever since the 11th century which it is still called today.
Donโt think Andalusian culture is totally gone but rather it still impacts the people of the world, Muslim or non-Muslim, in ways we never thought. Even something simple as a slipper.

๐ทDar al-Aman Libary in Rabat, Morocco
Many people ask me where to find good Arabic books on history of al-Andalus and from Andalusian authors. There is one Libary called Dar al-Aman Libary located in Rabat, Morocco. I consider this to be one of my favorite bookstores as you can find almost any book about al-Andlaus or written by scholars from al-Andalus here.
They also have many books on Maliki fiqh here.
They are also a publishing house and publish many books from many different genres.

Brother Musa al-Maghribi:
In historical Andalusia, fusha Arabic became the scientific, educational & administrative language, while the local languages remained the language of social conversations between the common people. And these include Catalan, Castilian, Aragonese, Berber, Arabic and more.
Andalusians excelled in the Arabic language; its sciences and literature. To the point where the art of muwashshah
(rhyme and metrics) in poetry is attributed to them, in which they reached beauty in both voice tones & wordplay and sophistication.
