In 1948, the women who contributed to this cookbook very likely sent their husbands, brothers, and sons off to war in Europe, or the Pacific. They may very well have watched them go to Korea, later on. I like to think that these are the exact home-cooked meals that those men would’ve daydreamed about while marching on beans.

Reading through a lot of these, you get a real sense of thrift and frugality, as if each recipe was adapted to wartime want.
