🌮 These crispy beef tacos have been circulating on social media since last fall.

I don’t normally add tomato paste to the ground meat when I make tacos, but I love the richness it adds. The mozzarella cheese was another amazing addition in my book. Beyond the glorious cheese pull it delivers, it adds extra creaminess. Oaxaca or Queso Fresco would also be great.

The best part, though, is really the texture. Taking the time to fry really allows the tortilla to take on a gorgeous golden color and the perfect crunch. The cheese also has just the right amount of time to get nice and gooey during this cook time. My mouth is watering just recounting my experience, and I fully intend on making them again.

Yakitori is a classic Japanese dish of bite-size pieces of chicken threaded onto skewers and cooked over high heat. In Japan, it’s the kind of food you’ll find at neighborhood yakitori shops, yatai (street food stalls), or izakayas (bars). The chicken is juicy, the edges are lightly charred, and everything is brushed with tare, a simple glaze made from soy sauce, mirin, sake, and sugar that caramelizes as it cooks.

Ingredients:
・¾ cup soy sauce
・¼ cup + 2 tablespoons mirin (sweet rice wine)
・¼ cup + 2 tablespoons sake
・¼ cup + 2 tablespoons (packed) light brown sugar
・1-in piece fresh ginger, peeled and sliced
・2 cloves garlic, peeled and smashed
・1 bunch scallions, cut into 1-in (2.5-cm) pieces, light and dark green parts separated
・1 tablespoon cornstarch combined with 1 tablespoon cold water
・2 lbs boneless, skinless chicken thighs, cut into 1-in (2.5-cm) pieces
・8 to 10 metal or bamboo skewers

🍓 This Strawberry Crepes recipe is to die for and belongs on a restaurant brunch menu, but the best part is how EASY they are to make! We make them often on the weekends (if you’re intimidated at all, I’ve got a really great tutorial for How to Make Crepes) and they are such a special treat! I love that the crepe batter can be made the night before, and if we have leftover crepes, they keep well in the fridge to reheat over the next few days.

Ingredients:

For the Crepes:
・4 large eggs
・1/3 cup butter, softened
・1/2 cup granulated sugar
・1 cup all-purpose flour
・1 1/4 cups milk
・1 teaspoon vanilla extract
・1/4 teaspoon salt

For the Filling:
・2 cups fresh strawberries, sliced
・4 ounces cream cheese, room temperature
・1/4 cup powdered sugar
・1/2 teaspoon vanilla extract
・1 pint heavy whipping cream
